Galeotti cheese from our origins

On Tuesday 12th of February an interesting workshop took place in the kitchen of this facility with Mario Tanda, a dairy producer from the creamery of Podere Paterno in Monterotondo Marittimo (Grosseto) .
The objective of the project is to promote cultural enrichment for the internal and external students of The Eno-gastronomy course Graziani section through the study of dairy products manufacture.
Besides the theory aspect, there was also a practical session during which the students engaged in the production of ricotta, raveggiolo and fresh cheese .
Those products were used as study specimens for the elaboration of recipes typical of the students origin.
The workshop was very much appreciated by the participants , it will definitely be proposed again in the nearest future .
